A versatile white wheat flour milled for general kitchen and bakery use, suitable for baking breads, cakes, cookies, pizza crusts, sauces and thickening. Medium protein content (typically 9.5-12%) which gives acceptable gluten strength for many baking needs while still tender enough for cakes and cookies. Enriched or unbleached depending on brand: Some bags are bleached and enriched (with vitamins and iron) to restore nutrients lost in processing. |
